The player can choose which stage to use when they select training mode.
If you mean when you toggle the "start game immediately " button in the global editor then it's whatever stage is the first stage
As for the back ground for 3d Character select
Go to global editor >guioptions >character select,Open.
Then scroll down until you see background prefab.
Make sure the stage you use is about the same size as the training room
